5 Amazing ways to cook the boring Lauki

Lauki also commonly called a bottle gourd or opo squash. It is frequently used in Indian cuisine. Lauki is also known by various names in different parts of India and different languages.  For example, it is called as dudhi in Marathi and Gujarati, ghiya in Hindi, and sorakaya in various other regional languages.

Lauki is considered to be extremely healthy. An additional vegetable such as Lauki is sure to put some really good health benefits to your life.

Lauki kofta recipe

Lauki kofta is a light tomato curry sinked delicious gravy cuisine. It has mouth-watering koftas made from bottle gourd or Lauki.

To make this recipe follow the steps given below:-

  • Rinse then peel and finally grate the Lauki 
  • Squeeze this grated LKauki. Keep the juice so that you can add it to your curry.
  • To this add some besan also known as gram flour, spice powders like chilly powder, turmeric powder, and salt.
  • Then mix this batter well. Next form some small-sized round or oval balls using this batter.
  • In case you wish to make pakoras you can simply add some more water to this mixture, so as you can get a batter with consistency that will help you in making pakoras. Additionally when making pakoras, then just drop spoonfuls of the batter to the oil while frying.
  • But for our purpose of making kofta, we have to add less water to make the batter and keep the consistency a little thick next, you have to heat oil in a Kadai or frying pan.
  • One can either shallow fry or deep fry the koftas. 9. While placing the Lauki kofta in the hot oil be sure to be gentle.
  • You need to fry the koftas in the oil, till they get an even golden brown color on all sides.
  • Then you have to drain the fried Lauki ke kofte on paper tissue so that you can remove all the extra oil from it.
  • Next, you need to make a smooth paste of the following – tomatoes, onions, green chilies, ginger, garlic, and cashews.
  • To make the curry or the gravy of the dish you need to first heat 2-3 tablespoons of oil.
  • Then fry some cumin in it.  Next, add the masala paste. 
  • To avoid spluttering of paste cover half of the pan. Keep stirring in between.
  • After thickening of the mixture add all the dry spice powders like the– turmeric, red chili powder, coriander powder, and garam masala powder.
  • Cook for 3 to 4 minutes. Add water Cook for 10-12 more minutes without covering with a lid.

Lauki thepla recipe

Theplas generally serve the purpose of being easy to cook and healthy breakfast or brunch. In addition to this, they remain soft adding to there goodness.  One can also add some besan also known as gram flour or Bajra also known as pearl millet or Jowar is also known as sorghum flour too to increase and make better both the taste and nutritional value of the dish. 

To make this dish follow the steps written below:-

  • Rinse, peel and grate the Lauki 
  • In ¾ cup of grated Lauki add the spices – 1 teaspoon ginger-green chili paste, ½ teaspoon coriander powder, ½ tsp cumin powder, ½ teaspoon red chili powder, ¼ teaspoon turmeric powder and ¾ teaspoon salt.
  • Next, you need to add 1 cup whole wheat flour and ¼ cup Bajra flour, ¼ cup Jowar flour, and 3 tablespoons besan.
  • Then add 2 tablespoons yogurt and 1 tablespoon oil to this mixture.
  • After kneading properly make medium sized balls from the dough.
  • Next, roll it to 5 to 6 cm and put the rolled Thepla on a hot Tawa 
  • Flip these rolled Theplas once or twice till they get well cooked.

Lauki ka halwa recipe

To make this dish follow the steps written below-

  • Grate a bland tasting lauki. Almost 300 grams.
  • Next heat 4 tablespoons of ghee in a heavy pan on a low to medium flame.
  • Add and mix the lauki
  • Then on a low to medium flame saute the lauki. Stir often when sauteing lauki.
  • After moisture evaporates add 2 cups full-fat milk to it
  • Keep stirring so the milk doesn’t flow out on boiling.
  • Keep cooking until 75% of the milk has been reduced.
  • Then add sugar, 3 tablespoons chopped nuts, and 1 teaspoon cardamom powder. 
  • Next, add 2 to 3 teaspoons of rose water or kewra water.
  • Once the mixture thickens with no moisture left to switch off the flame and your halwa is ready

Lauki bhaji recipe 

Lauki bhaji is an easy to cook recipe. To make this dish follow the steps written below-

  • 1. Rinse, peel and chop lauki
  • 2. Add 1/2 cup of chopped onions to hot oil. Saute and stir the onions for 2 to 3 minutes on a low flame.
  • 3. Add asafoetida and chopped green chilies. Then mix well.
  • 4. Next add the chopped bottle gourd and salt.
  • 5. Let this cook for around 14 to 16 mins on a low flame or sim.
  • 6.  Next add 1/3 cup of fresh grated coconut.
  • 7. Cook for 2 minutes more and serve hot.

Lauki Yakhni

To make this dish follow the steps written below-

  • 1. Rinse, peel and slice round pieces of lauki 
  • 2. Pan-fry the slices in a few tablespoons of oil.
  • 3. In another pan heat oil and add shah jeera seeds, black cardamoms, cinnamon. 
  • 4. Add 1 cup of water,  ginger powder, fennel powder, asafoetida, salt, and fried lauki pieces. 
  • 5. Next, add yogurt. Simmer for 2- 3 minutes and serve.
