Kolkata is famous for its Street Food. There are lots of small vendors selling street food in and around the corner. This dimer devil or dimer chop is available in almost every street food stalls. Chops are an integral part of the Bengali’s food culture, as is evident when a Bengali lists their favorite evening snacks or popular street foods. Every one of us has their own favorite chop that we want with our evening chai or sometimes with puffed rice (Moorie).
Ingredients
Potato Mixture
- 5 Medium size potatoes boiled and mashed.
- 3 tablespoons of Vegetable oil.
- 1 Big onion Chopped onion
- Ginger & garlic paste 1 tablespoon
- 2 green chillies Chopped
- 1/2 teaspoon
- Turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon Kashmiri lal mirch powder
- • 1 teaspoon Garam Masala Powder
- • Salt to taste
Ingredients for the batter
- 2 Eggs, lightly beaten
- 4 tablespoons
- Cornflour
- 1 teaspoon of black pepper powder
- Salt to taste
Other Ingredients
- 3 Hard-boiled eggs
- 3 cups of Bread crumbs
- Black pepper to sprinkle on the half eggs.
Procedure
- Peel the potatoes and boil them in pressure cook potatoes till done.
- Once the potatoes are cooled, mash them into a smooth paste.
- In a pan, now heat oil in and add 1 chopped onion. When they become golden brown in color add ginger garlic paste and chopped green chilies and fry till raw smell goes off.
- Then add 1/2 teaspoon turmeric powder, 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1 teaspoon Kashmiri lal mirch powder, 1 teaspoon Garam Masala Powder and salt to taste.
- Fry for a few minutes and mix them very well. Keep it aside and wait for the mixture cool completely
- While frying the masala hard boil the 3 eggs. Let them cool. Shell them and cut them in halves lengthwise.
The batter for the chops
- In a medium-sized bowl beat 2 eggs. Add cornflour, salt, black pepper powder and 3-4 tsp of water. Make a smooth batter.
- Divide the potato mixture into 12 equal portions.
- Now cover both sides of the eggs with the potato mixture in the shape of a full egg.
- Take bread crumbs in one bowl, smooth egg batter in another bowl.
- Dip the ‘Dimer chop’ in the egg wash and then finally coat them in bread crumbs. If required, then repeat the process with egg wash bread crumb.
- Heat oil in a kadhai. Slide the ‘dimer chop’ in hot oil one by one and fry them till brown and crisp.
