This soup is cool and creamy and a perfect way to enjoy summer. It is cold, refreshing and really light.

It is an extremely easy recipe which takes only 10 minutes to make. There is no cooking involved, just blending!

Ingredients

  • Cucumbers 4 medium sized
  • 2 cloves garlic
  • 2 sprigs curry leaves
  • Mint leaves handful
  • 2 cups yoghurt
  • ¾ cup milk
  • 1 green chilli
  • Salt to taste

Method

  • Wash the cucumber properly and cut it into cube-like structures. (You can peel the skin or keep it intact according to how you like it).
  • Now, take a blender jar and place all the ingredients in it and blend it properly and make a smooth, fine paste of it.
  • Place this inside a refrigerate and chill it for an hour before serving.
  • Voila! Your Chilled Cucumber Soup is ready to be served!
  • Garnish it with beaten yoghurt, extra virgin olive oil or mint leaves before serving!
